Minty Lemon Ginger Chicken Soup

Ingredients:
– 1 fresh lemon (juice and zest)
– 2-inch piece of fresh ginger (sliced)
– 4 cups chicken broth
– 1 carrot (sliced)
– 1 small onion (chopped)
– 2 chicken breasts (cubed)
– 1/4 cup fresh mint leaves (chopped)
– Salt and pepper to taste


Instructions:
– In a large pot, sauté chopped onion until translucent.
– Add cubed chicken and cook until lightly browned on all sides.
– Add sliced carrot, ginger, and chicken broth.
– Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the chicken is cooked through
and the carrots are tender.
– Add lemon juice, zest, and chopped mint leaves.
– Season with salt and pepper to taste, then serve warm.
